The thing supermarket meat doesn't come with is a person. There's no one to ask how to cook a flank steak, no one to portion the lamb the way Yiayia did it, no one to just butterfly a chicken because you asked nicely.

The thing we have, that they don't, is the team behind the counter.

Why it matters

Most of the people who shop with us know what they want most weeks - a kilo of mince, a chook for Sunday, the usual sausages. But every now and then, someone asks for something specific:

  • "I'm making osso bucco, what do I want and how thick?"
  • "Can you spatchcock this and brine it for me?"
  • "Mum's recipe says 'a piece of brisket the size of a brick' - what does that even mean?"
  • "Mince but coarser than usual, for chilli con carne"
  • "My toddler can't chew tough meat - what should I get for slow cooking?"
